Sundae Sunday – Vegan Vanilla AND Chocolate- Chocolate Chip Ice Cream

Double-flavors, Quadruple batch Sundae Sunday!

We made 2 gallons (4 batches) of chocolate chocolate-chip and one batch of vegan vanilla for a Crazy Love pool party.

The Vegan Vanilla received good reviews! It was easy – almond “milk,” almond butter, sugar, salt, and lots of vanilla. Mix in blender, then freeze with ice cream maker.

The chocolate chocolate-chip received top reviews, even from my vegan friend!

Vegan Vanilla Faux Ice Cream

Recipe by Chocolate Covered Katie – with minor adaptations by Kristin Emily Friend

Ingredients for ½ gallon:

• 4 cups Almond Breeze Almond Milk or milk of choice
• 1 cup almond butter
• 1/3 cup organic sugar
• 1/4 tsp + 1/8 tsp salt
• 3 Tbsp pure vanilla extract

Mix ingredients together. Freeze in ice cream maker.

Chocolate Chocolate Chip Ice Cream

I adapted The Spruce Eats recipe for Easy No-Cook Chocolate Ice Cream and added mini chocolate chips.

Ingredients for 1/2 gallon ice cream:

• 1/2 cup unsweetened cocoa powder
• 1 cup sugar
  • **Mix the above together before adding liquids**
• 1 1/2 cups milk
• 2 cups whipping cream
• 1 tsp. vanilla
• 1 cup or desired amount mini chocolate chips (I love the WalMart brand)

Mix cocoa and sugar together. Add liquids and mix. (Save chocolate chips for later.) Put in refrigerator for 2+ hours. Freeze in ice cream maker. Add chocolate chips when nearing the end of the freezing process.
